Butter Chicken
Ingredients
1 large brown onion
750g chicken breast
2 corn ears
1/4 cauliflower head
pumpkin chunk
small head spinach
6 medium cup mushrooms
handfull snowpeas
1 red capsicum
2 medium carrots
handfull beans
1/4 head celery
small tin corn
"Pataks Butter Chicken Curry Paste: Tomato and Tamarind" 312g
"Ayam Coconut Milk", 270mL can
rice
How to make Butter Chicken
fry onion
dice chicken
fry chicken in large pot until white
add curry paste & stir through
add water to cover chicken
simmer while stirring for 10 minutes, meanwhile chopping veggies
add harder vegies (capsicum, carrots, beans, celery, corn)
simmer 5 minutes
add softer veggies (cauliflower/pumpkin/spinach)
simmer 10 minutes
Add softest veggies (mushrooms, snowpeas, tin corn)
simmer 5 minutes
Add coconut cream and stir through.
Turn off heat, allow to settle for 2 minutes, serve on rice.
