Sweet Corn Souffle
Ingredients
½ c melted butter
2 lightly beaten eggs
1 8.5 oz package of Jiffy cornbread mix
1 can of whole kernel corn
1 can of cream-style corn
1 c. sour cream.
How to make Sweet Corn Souffle
Inspired by A Love Affair with Southern Cooking and the Semi-Ho
Preheat oven to 350.
In a large bowl, stir together: ½ c melted butter, 2 lightly beaten eggs, 1 8.5 oz package of Jiffy cornbread mix, 1 can of whole kernel corn, 1 can of cream-style corn, and 1 c. sour cream.
Pour into a lightly greased 9x9" baking pan.
Bake for 45 minutes.
