Seasonal Fish Salad
1 fillet of Sole Fish, skinned and sliced into 2 wide strips
1 cup Rocket Leaves
1/2 cup Mint
1/2 cup Chives, chopped
1/4 cup Parsley, stems discarded
a handful of Raspberries
1/4 lb Melon, diced
1 Yellow Kiwi, wedged
1 Tbsp Lime Juice
1 tsp Raspberry Puree
How to make Seasonal Fish Salad
- Season fish fillets lightly, roll and secure with a toothpick. Steam 8 mins.
- Combine rest of the ingredients together, toss and serve with fish.
