Healthy Buckwheat Noodles
Ingredients
NOODLES
Buckwheat Noodles (Can buy from Japanese stores)
FOR SOUP STOCK (2 Versions)
Either use 1 tablespoon Dashi for Soup Stock
OR
2oo gm Yellow Beans + a handful of Dried Anchovies for Soup Stock (this is the best)
FOR MEAT ON THE SIDE
200g Pork Slices
5 shitake mushrooms (thinly sliced)
3 chopped garlic
2 Tbsp HP Sauce
2 Tsp Pepper
1 Tbsp Black Soya Sauce
1 Tsp Salt
1 Tsp bicarbonate of soda
FOR VEGGIES ON THE SIDE
Thinly slice some lettuce
How to make Healthy Buckwheat Noodles
1a) Boil the soup stock with yellow beans and anchovies for half an hour. Then run through strainer to get rid of the stuff.
1b) At the same time, cook the pork slices with garlic, mushrooms, HP sauce, pepper, black soya sauce and salt for half an hour simmering at medium high heat.
2.) After the meat and soup stock is done, boil a saucepan of water, cook the buckwheat noodles till done. Use strainer to get the noodles and place in bowl.
3.) Add in the soup stock and top it with meat and sliced lettuce.
Healthy and simple dish!
Serve with some bird's eye chilli for chilli lovers!
