Perfect Corn Bread !
3/4 c. corn meal
1 c. flour
1/3 c. sugar
3 tbs. baking powder
3/4 tsp. salt
1/4 c. cream
1/4 c. whole milk yogurt
1 well beaten egg
2 tbs. shortening or soft butter or bacon fat
1 - 1 1/4 c. creamed canned corn
How to make Perfect Corn Bread!
Sift dry ingredients together. Mix in wet ingredients adding creamed corn until consistency of cake batter.
Bake 20 minutes (15 minutes using convection) at 425 degrees in pre-heated greased cast iron skillet.
