Ginger Fried Rice
2.5 cups rice, cooked
1 oz. dried shitakes, rehydrated
1 large onion, chopped
1 clove garlic, chopped
1 medium fresh ginger root, chopped
1 boneless chicken breast, chopped
1 egg, beaten
soy sauce 1-2 T?
pepper (to taste)
How to make Ginger Fried Rice
I felt like rice for dinner tonight and needed to use some ingredients up before moving out of my dorm later this week. All in all, it turned out very well.
Melt butter in a large frying pan over medium-high heat. Add onion, garlic and ginger and cook until the onion softens slightly. Mix in chicken and mushrooms and stir fry with soy sauce until chicken is cooked. Turn down the burner to medium-low then add in rice and beaten egg. Mix thoroughly and cook for a minute or two more.
Inspired by a clay pot dish I once tried at a Vietnamese restaurant.
I'm sorry the photo is less than spectacular. I took it with my laptop, temporarily lacking a camera. I'll get a better one up someday.
